Baklava Cake

Inspired by the beloved dessert, our Small Batch Team have whipped up this gorgeously fruity, floral and delicate Baklava cake with notes of rose, cardamom, honey, raspberry and pistachio. This small slice packs a Persian punch.
 
We've taken a soft walnut sponge and strewn jammy pockets of raspberries throughout, this sponge is then drenched in a honey, rose and orange-infused soak, ensuring each bite is perfectly perfumed. Each slice is then topped with a swirl of fluffy yoghurt frosting and finished with a sprinkle of freeze-dried raspberries, crispy wafers and crushed pistachio.
