A pale, dense coconut sponge, with desiccated coconut running through every slice, finished with a smooth pineapple-infused cream cheese frosting and a vibrant spiral of fruity mango jam swirled right across the top.

It smells sweet and unmistakably tropical: coconut leads, with fruity waves of pineapple and mango drifting up behind it. That carries straight through to the first bite. Sweet, creamy coconut through the sponge, bright pineapple in the frosting, and a sticky ribbon of mango lifting each mouthful. Sunshine in cake form.

It's soft, moist, and satisfyingly dense, with a gentle chew from the desiccated coconut throughout. The frosting stays smooth and creamy, the jammy mango swirl running through it right to the last forkful.
