Carrot & Passionfruit

It smells exactly like a classic carrot cake should. The sponge is perfumed with warming spices, sweet orange and rich molasses, the jam brings a sweet-sour hit of passionfruit, and the frosting cuts through it all with tangy cream cheese and a floral note of vanilla.

Warming spice and vanilla come first, backed by rich molasses and orange, and then the passionfruit jam arrives with a tartness and freshness that slices clean through the creamy cream cheese frosting.

The sponge is soft, light and moist, with plenty of texture running through it from the carrot, walnut and sultanas. In the middle there's a smooth, aerated frosting and jam, with passionfruit seeds adding a little crunch, and more of that crunch on top from the seeds and the flaked pistachios.

A moist carrot, walnut and orange sponge, cut through the middle and filled with a smooth vanilla cream cheese frosting and a layer of tangy passionfruit jam. Each slice is hand-piped with a squiggle of cream cheese frosting, then topped with more passionfruit jam and scattered with orange marigolds, rose petals and pistachio flakes.
