This stunning Small Batch Bake stacks layers of delicate vanilla sponge with a silky pistachio cream cheese icing and a ribbon of sweet strawberry jam. Beautifully topped with a generous ruffle of that gorgeously green pistachio icing, a scattering of freeze-dried strawberry pieces, and flaked pistachios for a little added crunch.

Serve alongside an ice-cold strawberry matcha using Blendsmiths Japanese Matcha blend for a seriously Instagrammable pairing.

Pretty in pink and green, and every bit as good as it looks.

A light, golden aerated sponge sandwiched with fluffy pistachio buttercream and bright strawberry jam, hand-piped with pistachio buttercream blobs and scattered with flaked pistachios and freeze-dried strawberry crumb.

It smells nutty and sweet, pistachio up front with vanilla and strawberry behind. That runs straight through the eating: sweet vanilla sponge, nutty pistachio in the buttercream, sweet strawberry cutting alongside.

The sponge is soft, light and moist, the buttercream creamy and fluffy over a thick layer of jam, with a slight crunch from the flaked pistachios to finish.

Great with an afternoon flat white, and hard to walk past on a counter.
