We’ve taken a trip down under for this Small Batch!

Inspired by the classic Aussie cake, we’ve taken a soft yet textured coconut-infused sponge speckled with flecks of desiccated coconut throughout. Each sponge sandwiches a smothering of tart homemade raspberry jam on a bed of whipped milk chocolate buttercream, which we've then topped with a thin coating of dark chocolate ganache, finished with a generous sprinkle of desiccated coconut and cut into squares, giving this Small Batch the classic Lamington look.

A soft, slightly dense coconut sponge, flecked with desiccated coconut throughout, sliced through the middle and filled with a sharp, tangy raspberry jam and a rich milk chocolate buttercream. Topped with a thin layer of silky dark chocolate ganache and finished with a generous scattering of desiccated coconut

  • PHYSICAL: A white coconut sponge with flecks of desiccated coconut throughout, sliced through the middle and filled with a bright raspberry jam and milk chocolate buttercream. Topped with a thin layer of chocolate ganache and heavily scattered with desiccated coconut, then cut into 18 squares.
  • SMELL: An intense coconut aroma from the sponge, with a sharpness from the raspberry jam. Hints of milk chocolate from the buttercream and ganache, finishing with a final burst of coconut from the desiccated topping.
  • TASTE: Coconut sponge with a sharp tang of raspberry jam cutting through a rich, chocolatey buttercream, finished with dark chocolate ganache and further hints of coconut on top.
  • TEXTURE: A slightly denser crumb thanks to the desiccated coconut, but still soft, with a fluffy buttercream, silky jam and a gentle crunch from the desiccated coconut topping.
