Bold, fruity, and unapologetically purple.

A light, airy sponge studded with pockets of jammy blackcurrant baked right through, topped with a thick layer of sweet vanilla cream cheese frosting and finished with a bold diagonal ripple of vivid purple blackcurrant jam swept across the surface.

It smells of sweet vanilla and cool cream cheese, with sharp, fruity blackcurrant cutting through underneath. The blackcurrant leads on the tongue too, punchy and tangy, with a bright citrus lift running alongside it, all balanced out by the cool creaminess of the frosting.

The sponge is soft and moist with those jammy little pockets throughout, the frosting fluffy and creamy, a glossy ribbon of blackcurrant preserve running through it.

A proper summer slab that earns its place on any counter.
