Wholesale Apricot & Pistachio Frangipane
A dense, moist almond frangipane sponge, studded all the way through with pistachios and topped with halved apricots. We finish each one with a sticky apricot glaze, then scatter over blitzed pistachios and blue cornflower petals for a bit of colour on the counter. Cut into 16 generous slices.
The smell alone does half the selling. Buttery almond first, then warm apricot and the soft green note of pistachio underneath.
The flavour is rich and properly almondy, buttery through the middle, with tangy baked apricot cutting across it and pistachio rounding everything off.
Texture is where this one earns its keep. The sponge is soft, moist and dense, the fruit yields easily, and the pistachios give you just enough bite to keep every mouthful interesting. Sits beautifully next to a flat white, and looks the part under glass all day.
Two things to flag: this carries almond and pistachio, so nut allergen labelling needs to be prominent wherever it sits on the counter.
