Say hello to our Lavender Honey Layered Matcha!

Using our newest and greenest pantry addition, Blendsmiths Ceremonial-Grade Wakaba Matcha, this is an incredibly simple, quick serve seasonal addition to your menu.

It’s sweet, perfumed and endlessly sippable, perfect served as a limited-edition drinks special alongside a slice of our newest Small Batch.

LAVENDER & HONEY LAYERED MATCHA 

Serves 1
Ingredients:
Drizzle of Honey
2 pumps of Lavender Syrup (Monin or Sweet Bird) 
300ml Milk of choice
Ice
Lavender Cold Foam (optional but delicious!)
100 ml of Double Cream 
Oat Milk Splash
1 pump of Lavender Syrup (Monin or Sweetbird)

METHOD 

1. Take your cup (glass or take-away), drizzle honey on the sides of your glass (optional) and add 2 pumps of lavender syrup.

2. Fill the cup with ice cubes and slowly top with 200ml of your chosen milk.

3. Pour your prepared serving of matcha slowly over the ice cubes for a beautifully marbled layer (see here for how to prepare: Single Serving or Batched).

4. Top with your pre-made Lavender cold foam (like the batched matcha, this can be made ahead of time and kept in a squeezy bottle in the fridge) and, if you're feeling fancy, a sprinkle of lavender over the top for a final botanical flourish.

5. Add a straw and enjoy with a slice of our Limited-Edition Honey, Lavender & Almond Cake.

We’ve done the legwork for you, and based on the price of our Ceremonial-Grade Wakaba Matcha at £0.80p per serving and a UK standard large iced drink being around 300ml, we’ve calculated this recipe would cost this much to make in your coffee shop:

In our own Coffee Shop Bakehouse, we charge between £4.50 and £5.00 for a layered iced matcha drink like this. Given the complexity of the drink, we think a 68% mergin (£5.00) would make sense for most coffee shops within the UK.
