Inspired by hazy summer evenings, we're mixing bright citrus, tart ripe berries and sweet almond to create a perfectly petite single-serve treat, fit for any cake counter.
A moist and wonderfully dense almond-packed sponge is baked into gorgeous golden rounds and topped with a pool of glossy blackberry jam held in place by a ring of perfectly piped yuzu-scented cream cheese frosting. Each friand is finished with a mint leaf and some candied yuzu peel, small but perfectly formed and the perfect partner to a matcha! (We're onto something here...)
