Tartberry Tart

For those of you who like a bit of zing at Christmas. Fresh cranberries and redcurrants are cooked down with orange zest to make a very vibrant fruit layer. This sits atop a vegan shortbread base and is sprinkled with pumpkin seeds and strands of caramelised orange zest. This is like a super posh, vegan zingy jam tart.
