The festive season is upon us and what could be more festive than the Nutcracker?

We're paying a delicious homage to the Nutcracker, specifically the Sugar Plum Fairy! We've taken an exceedingly moist and perfectly spiced brown sugar buttermilk sponge and smothered a layer of warming homemade cinnamon and plum jam between. Each slice is then topped with hand-piped swirls of rich and velvety amaretti-infused cream cheese frosting and finished with a sprinkle of freeze-dried cherries, gold-nibbed hazelnuts and pretty pink sugar pearls. This cake takes centre stage as the prima-ballerina of your cake counter.
