Strawberries and Cream

This is a true summer classic combo. We make a coulis from strawberries (with a few raspberries for good measure) and ripple it into the surface of a heavenly NGCI almond sponge. Top that all off with a light and creamy frosting and sprinkled with beautiful pistachios, this traybake is sweet, light and perfect with a good game of tennis!
