Rhubarb & Gin loaf

Rhubarb and Gin are a stunning match - with tart fruitiness from the rhubarb and botanicals from the gin. We've taken this ever-popular combo and turned it into a pretty-in-pink loaf for your summer counter.

We’ve baked a moist yet light sponge with chunks of tart rhubarb throughout. Soaked in a tangy pink rhubarb and gin drizzle, we've then piped a perfectly pink rhubarb frosting over the top and sprinkled it with freeze-dried raspberry pieces.

This cake pairs perfectly with a summery iced tea, pink lemonade (or, dare we say, a refreshing G&T) and is sure to be the star of your cake display.
