With its roots in South America, some people say the Hummingbird cake gets its name because its sweet enough to attract one.

Others say its from the fact that you hum with delight as you eat it. All we know is that we pack ours with tonnes of banana and pineapple and top it with zingy passionfruit frosting, toasted coconut and pecans.
